The mezcalero in the image to the right is pouring mezcal into a jicara to determine the amount of alcohol or ABV of the mezcal that has just come off of the alembic still. By observing the size of the bubbles known as pearls and duration the pearls last in the jicara, the mezcalero can closely estimate the ABV of the mezcal itself.
